Recipe for maple and speculoos tartlets
History
THE Maple syrup, the quintessential Canadian ingredient, is incorporated into various Canadian recipes, from pudding to pancakes to pie. In Canada, we have been preparing pecan pie for a long time, but we also appreciate the subtlety of butter tartlets.
The tart is a very old pastry that we have known and enjoyed since the Middle Ages. There are many pie recipes in Canadian cookbooks and gastronomic works.
It is said that Jacques Cartier discovered maple sap between 1536 and 1542. They observed a tree closely. Mistaking it for a walnut tree, they made a cut in the bark to see the maple water gushing out. Maple syrup comes from this liqueur. Today, it enhances many recipes including these maple and speculoos tartlets.
Ingredients
- 160 ml of maple syrup
- 20 cl of liquid cream at 30 % fat
- 20 g cornstarch
- 100 g brown sugar
- Three tablespoons of water
- 10g butter
- 6 speculoos tartlet bases
Preparation
Pour the brown sugar, maple syrup and liquid cream into a saucepan. Bring to a boil while stirring with a whisk. Mix the cornstarch and water in a bowl until combined. Once the saucepan comes to a boil, add the cornstarch and water mixture and stir. Then add the butter and mix until the fat melts. Pour the mixture into the speculoos tartlet bases. Keep everything cool for six hours before enjoying it.
Good ingredients in a pie
These tartlets contain maple syrup and the merits of this Canadian product are often praised. Rich in antioxidants, it helps cells fight against the problem of aging. This unrefined syrup has a lower glycemic index than white sugar.
This Canadian culinary delight also contains brown sugar. The latter is rich in carbohydrates like white sugar. However, it is not refined. It contains calcium, magnesium, fluoride, vitamin B2, zinc… In Quebec, we prefer brown sugar which is healthier, but which has less sweetening power than that of table sugar.
In short, these tartlets contain mainly unrefined Canadian ingredients which are excellent for your health and yet do not lack flavor.
