How to prepare maple cream?
To prepare the maple cream, simply follow the few steps below.
First, in a saucepan, bring the 500 ml of milk to a gentle boil. In other words, it involves heating the milk until it is steaming, not waiting for it to boil completely. Next, get a bowl and add the egg yolks, maple sugar, flour, maple syrup and cornstarch. Whisk everything until you obtain a homogeneous texture. Then, you will slowly pour the hot milk over the mixture and whisk it in well. It is absolutely necessary to ensure that the mixture is smooth and without lumps.
Once you have a smooth mixture, pour everything back into the saucepan and bring to the boil again over medium heat, stirring constantly. As soon as the mixture thickens, remove the pan from the heat, add the butter and mix again until smooth.
Pour the mixture into a bowl, cover it with plastic wrap placed directly over the entire surface of the cream and place the bowl in the refrigerator for at least 3 hours. The cream must remain cool until the cream sets.
