Canadian recipe for tourtière (meat pie)
Pie crust recipe
Ingredients :
- 250g of flour
- 225 g butter or lard
- ½ teaspoon of salt
- ½ glass of iced water
- 1 egg for the icing
Preparation
Combine flour and salt in a large salad bowl. Add the butter or bacon gradually: the dough should start to become crumbly. Then add the cold water by the spoonful and continue to knead the dough until it takes shape. Make it into a ball which you will flatten and cover with cling film before placing it in the fridge.
Meat filling recipe
Ingredients :
- ½ kg of potatoes
- ½ kg ground beef
- ½ kg minced pork
- 1 small onion
- 2 cloves garlic
- ½ teaspoon chicken spice
- ½ teaspoon of cinnamon powder
- ¼ teaspoon powdered cloves
- ¼ teaspoon powdered nutmeg
- ¼ teaspoon of salt
- ¼ teaspoon pepper
Preparation
Peel the potatoes and rinse them. Then cut them into large pieces. Place these in a saucepan that you cover with water. Bring to the boil and then lower the heat to cook gently for around twelve minutes. Remove the water from the potatoes, reserving a glass for the rest of the recipe. Puree the potatoes.
Heat a large frying pan with olive oil. Brown the onions and garlic before adding the ground beef and pork. Cook until there is no more pink in the meat. Remove excess fat. Add the chicken spices, cinnamon, nutmeg, salt, pepper and the glass of potato cooking water. Mix well and simmer until the mixture dries out. Remove from the heat, add the mashed potatoes.
Assembling the pie
Preheat the oven to 200°C. Divide the dough in half. Lower one of the halves for the base of the tart, and place it in the mold. Add the filling on top and brush the outer edges with beaten egg.
Roll out the second half of dough to place it on top of the pie. Take care to pinch the edges well. Brush the dough with the beaten egg and create openings on the top.
Bake for 30 to 35 minutes or until the dough is colored. Wait at least 10 minutes after removing the pie from the oven to serve it.
