Satisfying and nutritious, this baked beans dish helps you survive the trip. It is one of the first Canadian meals in history. First Nations people cooked everything in hot stone pots. They used animal fat and Maple syrup. In the 16th century, we witnessed the arrival of English and French settlers. Recipes differ, as some prefer to cook baked beans with molasses, while others opt for traditional maple syrup.
In New England, we find baked beans in Boston. Bostonians appreciate this dish so much that it can be found in quantities in terracotta pots. The popularization of molasses became effective in the 18th century when a tax on sugar forced its consumption to be reduced. In Quebec, baked beans are mainly prepared using maple syrup. In the 20th century, baked beans became an emblem of Canada. This meal fed the builders of the Trans-Canada railway.
Ingredients
- 450 g dried navy beans or dried white beans
- 340 g pieces of streaky, rindless salted bacon
- One large onion, finely chopped
- Two cloves of garlic, finely chopped
- 15 ml of butter
- 1.5 liters of salt-free chicken broth
- 60 ml maple syrup
- 60 ml of molasses
- 60 ml of ketchup
- 10 ml powdered mustard
- 2.5 ml ground pepper
- Two bay leaves
Preparation
Place your beans in a large bowl and cover them with water. Leave to soak overnight and make sure they are kept at room temperature. Add water to cover your navy beans or dried beans. Place the salted bacon in another bowl and cover with cold water. Cover the bowl and refrigerate for 12 hours. You can leave it overnight. Rinse the beans before draining them. Also remove all the water from the bacon. Put the latter in a saucepan and cover with cold water. Bring to a boil and then remove your pan from the heat. Leave to rest for a quarter of an hour and drain your bacon before reserving it on a plate.
Place the rack in the hollow of the oven which you will preheat to 150°C. Brown the garlic and onion in the butter over medium heat. Add the remaining ingredients, salted bacon and beans. Stir and let boil. Cover your casserole dish to let the beans cook for four hours. Remove the casserole from the oven and mix the beans. Mash your beans with a spoon (not all) to thicken the sauce if you find it too liquid. Replace the lid of the casserole dish and let the beans sit for a quarter of an hour so that the sauce thickens. Adjust the seasoning to your preferences.
Remove the bacon and place it on the work surface to cut it into slices. Remove the fat and serve your beans with a nice slice of bacon and some good toast. Let your beans cool before refrigerating them. You can reheat them the next day before serving them. Note that you can also freeze this dish.
