We do not know exactly the origins of this dessert which is crème brûlée. We talk about this specialty in a cooking book from the 17thᵉ century. It was inspired by the famous Catalan cream. A few centuries later, we find this cream recipe on the menus of the greatest restaurants. What makes this sweet dish so popular? Firstly, it only requires a few ingredients and the preparation requires almost no effort while the flavors are simply exquisite. In this Canadian recipe, we revisit crème brûlée with Canadian ingredients including Saskatoon berries and blueberries. Saskatoon berry or Saskatoon comes from a small native tree that grows in the western part of Ontario up to the Yukon Territory. Rich in antioxidants and folic acid, these small berries also contain a lot of vitamin C. In Canada, it is incorporated into many cooking recipes including this crème brûlée. It can be replaced by blueberry which belongs to the “Vaccinium” category.
Ingredients
- 125 ml Saskatoon berries or blueberries
- ½ vanilla pod, cut and two
- 5 egg yolks
- 75 ml of sugar
- 50 cl of crème fraîche
- 2.5 cl of maple sugar or brown sugar
Preparation
Marinate your Saskatoon berries or blueberries with the previously deseeded vanilla. Leave to rest for ten minutes. Quickly beat the sugar and egg yolks until white. Add your cream before whipping again. Keep 15 ml of berries for decoration. Pour the rest into oven-safe ramekins.
Preheat your oven to 130°C and pour the mixture over the berries. Cook everything in the oven, in a bain-marie, for 40 minutes. Then remove from the water bath and oven. Let cool and keep in the refrigerator overnight. Sprinkle with your maple sugar and put on a very hot grill. Remove when the top is nicely browned. Decorate with your berries and serve.
