The baked bean dish or beans with bacon is a Quebec specialty. This traditional meal consists of succulent pieces of bacon and beans. To sublimate the tastes, care was taken to add molasses or maple syrup. Even today, this hearty meal is eaten for breakfast in sugar shacks.
Regarding the history of the dish, it began around the 1830s when American cooks were teaching cooks in Quebec. One of the lessons was about cooking beans. Everyone already knew the baked baked bean dish. We added molasses to the classic recipe. The latter was then replaced by maple syrup.

Ingredients
- 4 cups navy beans or dried white beans
- Water for soaking
- 6 cups cold water (reserved for cooking)
- 250ml maple syrup
- 125ml ketchup
- 225 g salted bacon, streaky and diced, without rind
- 2 chopped onions
- 15ml Dijon mustard
- A teaspoon of salt
- Half a teaspoon of ground pepper
Preparation
- Place your beans in a bowl before covering them with water.
- Leave to soak overnight.
- Add even more water if needed. Rinse your beans and drain them.
- In a slow cooker, combine the ingredients.
- Cook for 9 hours at low temperature.
- On the other hand, you can also cook everything at high temperature, but for 6 hours.
- Change the seasoning according to your preferences.
- Note that the baked beans will taste better the next day.

The sugar and sodium content in baked beans depends on the brand if you buy the canned dish. Likewise, the flavors vary according to the composition. Indeed, some people replace maple syrup with caramel or brown sugar.
