History of the recipe
The old-fashioned donut, also known as a “sourdough donut” is a sweet pastry that comes from Quebec. It is made like a donut with eggs, flour, sugar, beer, milk, nutmeg and vanilla.
The famous donut chore is anchored in Quebec tradition. The tradition finds its source in the 19th century when wheat production was declining for various reasons in Lower Canada.
Ingredients and preparation
To prepare this old-fashioned donut recipe, you will need:
- Preparation time: 10 minutes
- Cooking time: 20 minutes
- Number of servings: 24 donuts
Ingredients
- 830 ml of flour;
- 5 ml baking powder;
- 1.25 ml of nutmeg;
- 1.25 ml of salt;
- 30 ml of melted butter;
- 250 ml of sugar;
- 2 eggs ;
- 180 ml of milk;
- 2 liters of canola oil.
Preparation
Mix baking powder, flour, salt and nutmeg in a bowl. Whisk the sugar and butter using an electric mixer. Add your eggs and continue to beat for three minutes until you obtain a homogeneous mixture. Using a spatula or wooden spoon, add the dry ingredients and milk (alternating) until you have a ball of dough. If the mixture is too liquid, add flour.
Split the dough in two and on a floured surface, roll out the first ball to a thickness of 1 cm. Using a 7.5 cm diameter glass or a cookie cutter, cut out a dozen circles. With another cookie cutter 2.5 cm in diameter, make a hole in the hollow of each circle. Repeat the same thing with the remaining dough.
In a saucepan or fryer, heat the oil until it reaches a temperature of 190° C with a special cooking thermometer. Cook a few donuts for three minutes on each side until golden brown. Drain using absorbent paper and leave to cool on a rack.
