The necessary ingredients
Quinoa salad with vegetables for 4 to 6 servings requires on average:

For the salad

2 zucchini, cut lengthwise into slices;

1 red onion, peeled whole and cut into slices;
-
1 bunch of green onions;
-
1 thin layer of fennel at the base of the bulb, cut and sliced;

600 ml of extra-virgin olive oil;
-
500 ml of chicken broth;
-
2 peppers of various colors cut in half;
-
4 cups quinoa, rinsed and drained;
-
2 ears of corn, peeled;
-
1 small bunch of mint, basil and parsley, roughly chopped;
-
Salt and pepper to taste.
For the vinaigrette

80 ml of extra-virgin olive oil;
-
80 ml of balsamic vinegar;
-
4 tbsp of honey;
-
2 tbsp of whole-grain mustard;
-
Salt and pepper to taste.
Preparing quinoa salad with grilled vegetables
Quinoa salad with grilled vegetables is very simple to prepare. Simply follow the different steps below.
First, start by preheating the grill to medium high. Then, in a saucepan, bring the chicken broth to a boil. Add the quinoa to the broth, then cover and simmer for 13 to 15 minutes over low heat, until the broth is completely absorbed.
Meanwhile, in a large bowl, coat the cut vegetables with olive oil. In another bowl, mix the vinaigrette ingredients and brush the corn cobs with it.
On the hot, oiled grill, place the corn cobs and cook the vegetables for about 5 minutes on each side. Only the zucchini will only be cooked for 1 minute on each side. This process is necessary so that the vegetables are very tender.
In a salad bowl, mix the herbs, grilled vegetables, cooked quinoa and vinaigrette. Then add salt and pepper to taste.
