Canadian Ice Wine
Canada is one of the largest producers of ice wine in the world, but it wasn't initially very popular because it wasn't very popular with the local population. So, Canadian producers looked beyond their borders and began exporting ice wine to foreign markets.
Canadian Icewine was first produced in 1972 in Quebec, Canada, by a Canadian producer. He used maple syrup as a sweetener and introduced a method that allowed for more sugar to be released during the process.
Quality ice wine
Ice wine is a dessert wine and, as such, is consumed after main courses or with desserts. Ice wines have a high acid content and therefore a lower pH than other wines. They benefit from the VQA designation of "vin de pays," which is similar to the European Union's PDO.
