Vidal Grand Reserve Icewine is a delicate wine that comes from the fermentation of grape juice from the Vidal Vineyards property, one of the oldest vineyard plantations dating back to 1981. It is at low temperatures - between -10 and -12°C in the heart of a Canadian winter - that the grapes used to make this wine are picked. The cold climate allows for a slower fermentation process which increases flavor concentration.
The process of making Canadian Icewine begins with the selection of the best grapes which are harvested in late fall and then left to freeze on the vine. The frozen grapes are then sorted, pressed and fermented to produce a concentrated grape must. The must is then enriched with sugar, yeast and water to turn it into wine.
This wine is perfect for any type of occasion: to taste a local Canadian product and introduce others to it. The little touch of freshness that its acid taste brings goes well with the sweet taste. It goes wonderfully with a sweet dessert, such as fruit or cheese. It is also perfect as an accompaniment to foie gras or delicate petit fours. It can also be used in the development of original alcoholic cocktails.
