Whipped cream puffs with maple syrup recipe
Ingredients
- 1 brick of very cold whipping cream
- 160 g of flour
- 100g butter
- 20 cl of water
- 5 eggs
- 5 tablespoons of Maple syrup
- 1 teaspoon of sugar
- 1 large pinch of salt
- Icing sugar
Preparation
The choux pastry recipe requires approximately 20 minutes of preparation and 25 minutes of cooking. However, it is preferable to wait 4 hours once the choux has been filled to serve them. This way they will be very soft.
For the maple syrup whipped cream, allow 20 minutes.
Recipe steps
Start by preheating the oven to 180°C. Sift the flour.
Place the water, salt, butter and sugar in a saucepan over medium heat. Once boiling, pour the flour all at once on top. Over low heat, stir well and mix with a spatula. The dough is ready once it pulls away from the sides of the pan and forms a ball.
Turn off the heat and let the dough cool. Place a sheet of parchment paper on your baking tray. With a small spoon, form small piles of dough on top. You can also use a piping bag for something more regular. The cabbages will swell during cooking: so take care to space them well on the sheet.
Bake for around fifteen minutes. Check the color of the choux without opening the oven door: they should be nicely browned. Then take out the plate and let cool.
Equip your food processor with a whisk attachment to make flavored whipped cream. Then pour the cream and maple syrup into the bowl. Start the robot on high speed for 5 minutes. Once the cream is set, keep it cool until ready to stuff your choux. Use a piping bag to fill them.
Make a small hole on the flat part of a cabbage so you can slip the nozzle from your pocket into it. Stuff the cabbages one by one. You can also cut the top of each cabbage and hollow out the inside so you can add more cream.
Variations for this recipe
If you want to make this recipe even more delicious, you can dip the tops of the choux in a still hot caramel before stuffing them. In addition to being sweeter, they will also be crunchy.
Sprouts can be sweetened in other ways. You can place pearl sugar on the top of your dough before baking, like for chouquettes. You can also make a cracker that you place on the top of each pile of dough.
Walnuts are great for adding texture and their taste pairs perfectly with the maple syrup. You can add roughly chopped pistachios or almonds to your maple whipped cream before stuffing your choux.
