INGREDIENTS :
600 ml (2 1⁄2 cups) fresh or frozen cranberries
Finely grated zest and juice from one large orange 175 ml (3⁄4 cup) maple syrup
1 inch (2.5 cm) piece of fresh ginger, peeled and finely grated
PREPERATION :
In a medium saucepan, bring the cranberries, zest, orange juice, maple syrup and ginger to a boil.
Simmer over medium heat, uncovered, 8 to 10 minutes or until tender.
Make a puree in a blender and let cool.
