Its amber color which evokes caramel suggests rich and deep aromas. On the palate, this wine releases a series of delicious tastes: notes of honey and fruit - in particular apricot and peach - follow one another to the delight of the palate. Rich, fine, and silky are adjectives that best describe its mouthfeel.
Vidal Grand Reserve Icewine is a delicate wine that comes from the fermentation of grape juice from the Vidal Vineyards property, one of the oldest vineyard plantations dating back to 1981. It is at low temperatures - between -10 and -12°C in the heart of a Canadian winter - that the grapes used to make this wine are picked. The cold climate allows for a slower fermentation process which increases flavor concentration.
The process of making Canadian Icewine begins with the selection of the best grapes which are harvested in late fall and then left to freeze on the vine. The frozen grapes are then sorted, pressed and fermented to produce a concentrated grape must. The must is then enriched with sugar, yeast and water to turn it into wine.
This wine is perfect for any type of occasion: to taste a local Canadian product and introduce others to it. The little touch of freshness that its acid taste brings goes well with the sweet taste. It goes wonderfully with a sweet dessert, such as fruit or cheese. It is also perfect as an accompaniment to foie gras or delicate petit fours. It can also be used in the development of original alcoholic cocktails.
Ice wine is magic: grapes are harvested naturally frozen on the vine, at minimum -8°C, in the heart of the Canadian winter. The concentration of sugars and aromas is extreme. Vidal is the iconic grape variety of Canadian ice wine.
An explosion of flavors: candied apricot, honey, mango, roasted pineapple, with a finish of yellow peach notes. The texture is silky, almost syrupy, but the natural acidity perfectly balances the sweetness. No heaviness, just pure indulgence.
Store the bottle lying down, in a cool place (10-14°C) away from light. Keeps for several years sealed. Once opened, drink within 3-5 days refrigerated. Serve very cold (8-10°C) in a small dessert glass.
The royal pairing: foie gras au torchon, blue cheeses (roquefort, fourme), tarte tatin, yellow fruit panna cotta. Also divine with white chocolate or on its own, at the end of a meal. Avoid overly sweet desserts that would crush its delicate aromas.
Canada is the world's largest producer of ice wine. Why? Because its winters are harsh AND predictable enough to freeze grapes every year. Where Germany produces once every three years, the Niagara Peninsula guarantees the harvest annually. Our liquid gold.
Sublime in a winter kir royal: 2cl of ice wine in a flute, top with brut champagne. Also perfect in an original spritz (ice wine + prosecco + orange zest). Bartenders use a few drops in creative cocktails to give body and fruitiness.
The exceptional gift: for great wine lovers, epicureans, or to mark a special occasion (wedding, anniversary, festive dinner). Its rarity in Europe makes it a truly unique gift. Luxurious presentation with optional gift box available.
