Our house-made Canadian pancake mix — the ready-to-use base for fluffy Sunday-morning pancakes. Just add one egg, milk and a knob of butter, and you'll find the airy texture and brioche flavour of Montreal cafés. Not an industrial mix — our own recipe.
Supermarket mixes often contain milk powder, preservatives, synthetic flavours — not a pretty list. Ours is Canadian wheat flour, sugar, raising agent, salt, full stop. Closer to grandma's homemade, purer, more flavourful. And you can add anything you like (vanilla, cinnamon, maple syrup, fruit) without flavour clash.
Preparation: mix 1 portion + 1 egg + 200 ml milk, rest 5 min, then onto a hot pan. Storage (sealed bag): dry, at room temperature, lasts months. Once open, transfer to an airtight jar and use within 2 months to keep the raising agent active.
The mix contains gluten (wheat) — so not for coeliacs. Egg-free, milk-free in the mix: you choose afterwards whether to add cow's milk, plant milk or nothing. Nut-free, soy-free. Health-wise: flour + raising agent + a touch of sugar — much cleaner than an additive-heavy industrial mix.
Our Sunday winning combo: this mix + a bottle of our amber maple syrup, and you treat the family to a proper Lac-Saint-Jean brunch. Chef's tip: add a spoonful of Greek yoghurt to the batter for even fluffier pancakes. Also a lovely welcome gift for visiting friends.
We use Canadian wheat flour (imported from Manitoba), and our recipe is bagged in small batches in Quebec — not in European factories with additives. Sea-shipped, no synthetic flavour, no milk powder to bulk up the weight. You're paying for honest raw material, not marketing packaging.
