The cheese is made from raw milk, in order to respect hygiene rules and guarantee the maintenance of the cold chain, it is only shipped via Chronofresh. You will receive your frozen cheese at home, which you will place in your freezer. You will therefore be able to consume it on the desired date while respecting the DDL indicated on the sachet.

We ship the poutine cheese packaged in individual 500 g sachets and frozen. Place your pouches of poutine immediately in the freezer after reception. The maximum consumption date is indicated on the sachet.
After thawing the cheese, keep it in the refrigerator and consume it within 72 hours.
Cheese curds are THE fresh Quebec cheese essential for a real poutine. Unaged cheddar curds, firm, elastic. The secret? They squeak "squick squick" in your teeth when fresh. The Coaticook creamery is the historic reference in Quebec since 1940.
The "squeak squeak" sound under your teeth indicates freshness of the cheese. It's due to air trapped in the still-elastic curd. After 5-7 days, the cheese loses this "squeak" as it ages. For real poutine cheese, it's an essential quality indicator.
Store in the fridge at 2-4°C, in original packaging. Shelf life typically 3-4 weeks after production. To optimize the "squeak": take it out 30 minutes before using, at room temperature. Avoid freezing which totally alters the characteristic texture.
The golden rule: never grated! You use whole curds. Place them on hot fries (straight from the fryer), then pour scalding hot brown sauce over. The cheese slightly melts from the sauce's heat. Count 100-150g of cheese per generous poutine serving.
Beyond poutine, great as an aperitif eaten plain with a glass of wine (like cheese to eat as is). Also delicious fried in tempura batter (Quebec-style mozzarella sticks!), or melted on a homemade burger. Avoid long cooking: it releases water. Better to add it at the end of the dish.
Cheese curds must be ultra fresh to keep their "squeak". A strict cold chain and fast transport from Quebec are needed. Very few European grocers can offer it. At Trésors d'Érable, we import it regularly to guarantee freshness. A truly authentic product, not a local copy.
