The Quebec clover honey is a monofloral honey gathered when bees forage the vast white-clover fields of Canada. Very pale colour (almost white), gentle, delicate, lightly vanilla-tinged taste. The most consensual Quebec honey — loved even by those who don't usually like honey.

Difference with blueberry honey: much softer and more delicate, no fruity note. Difference with wildflower: more precise monofloral profile, creamier. Difference with European acacia: clover is a touch rounder, more marked in the mouth, creamier. The ideal entry-level honey for anyone wary of bold tastes.

Like all honeys: dry, at room temperature, not in the fridge. Clover honey crystallises particularly quickly (often within weeks) — that's due to its natural composition, not a fault. To re-liquify: warm water bath (max 40 °C) for 5-10 min. Many love it crystallised on toast — easier to spread.

No major allergens: gluten-free, lactose-free, nut-free, egg-free. Heads up: not for children under 1 year and pollen-allergy sufferers. Health-wise, clover honey is rich in antioxidants and has soothing properties. Great in a hot drink for a sore throat or before sleep thanks to its gentle, delicate character.
