Maudite from Unibroue is Quebec's iconic strong red ale8% ABV, bottle-conditioned, with its legendary chasse-galerie label. Red-copper robe, creamy beige head, notes of spices, roasted malt, candied fruit. A complex, powerful beer to sip slowly.

An Irish red ale (Smithwick's, Kilkenny) is light, malty, 4-5%. Maudite is a strong Belgian-inspired red at 8%, bottle-conditioned, with distinctive spicy depth. Honestly, more than a red — a meditation beer, complex, close to Belgian dubbels. The secret: Unibroue's house yeast.

Store the bottle upright, away from light, at 10-15°C. Since bottle-conditioned, a sediment forms — normal. Serve at 8-10°C in a tulip glass to release the complex aromas. Ages well up to 5 years, gaining depth over time.

8% ABV — strong, sip slowly and in moderation. Contains gluten (barley, malt) — not for coeliacs. Lactose-free, GMO-free. Avoid for pregnant women and drivers. One 750 ml = about 5 standard glasses. A social drink, not a thirst quencher.

Maudite loves powerful, earthy dishes: game (deer, wild boar), braised lamb, beef bourguignon, Quebec stew. Cheeses: aged cheddar, blue, comté. Dessert: pecan pie, dark chocolate cake. Avoid overly delicate dishes.

It's a strong specialty beer imported from Quebec, bottle-conditioned (a long process).
