The Quebec blueberry honey is a single-flower honey gathered by bees from the wild blueberry fields of Lac-Saint-Jean. Medium-to-dark amber colour, fruity with a fresh edge typical of wild blueberry. An artisan honey, natural and unpasteurised, in a 500g jar.
Difference with a wildflower honey: this is a monofloral honey — the bees foraged mainly blueberry flowers, giving a precise, marked profile. Difference with a European acacia or lime honey: the fruity, woody note of wild blueberry is unique to Quebec — you won't find it in Europe.
Keep the jar dry, at room temperature — not in the fridge (it crystallises faster there). If your honey crystallises, that's a sign of quality, not a fault. To re-liquify: place the jar in a warm water bath (max 40 °C) for 5 to 10 min. Never heat aggressively — it destroys the beneficial compounds.
No major allergens: gluten-free, lactose-free, nut-free, egg-free. Heads up: not for children under 1 year (infant botulism risk) and pollen-allergy sufferers. Health-wise, blueberry honey is rich in antioxidants, flavonoids and minerals. A noble sugar that brings more than empty calories.
