Supermarket caramel popcorn is sugar + glucose + caramel flavouring + colouring. Here the caramel is made only with Quebec maple syrup, butter and a pinch of salt. Result: a rounder taste, less aggressively sweet, with that lovely toasted, woody note no synthetic flavour can match.
