Cabernet Franc loves the continental climate of Niagara Peninsula and Pelée Island. Here it ripens slowly, gains complexity without excess. More subtle than Cabernet Sauvignon, it offers red fruits, grilled pepper and soft spices. The most expressive Canadian red.
A medium-bodied, elegant red, with deep ruby color. On the nose: cherry, raspberry, plum, with those typical notes of grilled pepper and soft spices. On the palate: fine, silky tannins, preserved freshness, slightly woody finish. A Cab Franc reminiscent of Loire wines, but riper.
Store the bottle lying down, in a cool place (12-16°C) away from light. Good cellaring 5-7 years. Serve at 16-18°C in a Bordeaux red wine glass. Decant for 30 minutes to release the aromas, especially if the bottle is young.
Magic with grilled red meats (rib of beef, lamb, game), maple duck breast, or mushroom risotto. Also excellent with aged cheeses (comté, brie de Meaux). To twist things up: serve it with tex-mex dishes (chili, fajitas).
