Maple wine and sea buckthorn jelly

This jelly is packaged in a 110 ml glass jar, weighing 256 g. It is made from maple wine and sea buckthorn. Maple wine is obtained by fermenting maple sap (sap from the tree) using yeasts. It is not necessarily very sweet, especially when the fermentation is long, the residual sugar level is low. As for the sea buckthorn, it is a tree giving small fruits. The latter has a fresh and acid taste, between pineapple, apple and passion fruit. This maple wine and sea buckthorn jelly is eaten on toast or slices of fresh bread in the morning. It can also be served with cheese or fish.

Sea buckthorn is the orange fruit or berry that grows in clusters on the branches of sea buckthorn. It is rich in vitamin C, beta-carotene, antioxidants and fiber, while being rather low in calories. It has been consumed for centuries in Europe and Asia. In Canada, sea buckthorn is sometimes used as an ornamental shrub or windbreak, but it is also grown in Quebec. It tolerates both drought and extreme cold. The fruit is difficult to pick, as it is very fragile. We cut the branches to put them to freeze in order to harvest the fruits more easily later.
