Whole roasted almonds, coated in a fine layer of crystallised maple sugar. Not a sticky caramel: a sandy, light, crunchy shell that cracks under the tooth and releases the lovely roasted-almond flavour. The Nordic confection par excellence: understated, refined, addictive.
The Maple Mixed Nuts on the counter are a mix (cashew, pecan, almond) with caramel. Here we stay on a single nut (almond) with a coat of crystallised maple sugar (sandy, not caramel). Drier, snappier, more elegant — and easier to gift in pouches for weddings or parties.
Keep them dry, away from light, in an airtight jar or the resealed pouch. No fridge (moisture would soften the crystallised sugar). Once open, ideally finish within a month for max crunch. Texture: sandy and crisp in the mouth, with the roasted almond taking over from the maple sugar.
Contains almonds (tree nuts) — avoid if allergic. Gluten-free, lactose-free, egg-free, vegan. Health-wise the almond brings protein, fibre and magnesium, and the maple sugar keeps some of its minerals: a snack that fills you up without a sugar crash.
We see them as the "Quebec wedding almonds" — the kind you tuck into tulle pouches for weddings and christenings. At the counter we suggest them roughly crushed over fresh goat's cheese or Greek yoghurt. With a strong coffee at the end of a meal: very Quebec, very chic.
A quality whole almond costs several times more than peanut chunks, and the crystallised maple sugar coat takes patience (the sugar is layered on in successive passes). Artisan production in Quebec, sea-shipped: the price reflects time and noble ingredients, not marketing packaging.
