Express buckwheat galettes in a bottle — same practical principle as our express pancake, but with Canadian buckwheat flour instead of wheat. The result: more rustic, slightly nutty galettes, perfect sweet or savoury. 2 minutes: water, shake, pan.

Difference with the express pancake: buckwheat flour instead of wheat, so gluten-free, more rustic texture and bolder taste. Difference with Breton galettes: the Quebec version is softer and thicker, and you can serve it sweet (maple syrup, fruit) or savoury (egg, cheese).

Add water up to the line, seal tight and shake hard for 30 seconds. Rest 2 min so the buckwheat soaks up the water, then pour into a hot pan. One bottle = around 6 galettes. Once water's added, finish within 24 h in the fridge.

The bottle contains powdered eggs and milk (already in the mix). Buckwheat is naturally gluten-free, but check the label if you're coeliac (possible wheat traces). Nut-free, soy-free. Health-wise, buckwheat brings fibre and magnesium on top of standard wheat — a bit more nourishing and easier to digest.
